Before you start, you’ll need all the ingredients and to make the perfect dish. You’ll need:
- 2 fresh ripe mangoes or 1 cup frozen mango pulp (both Alphonso pulp & Kesar Pulp will work well)
- 1/2 cup sour cream
- 3/4th teaspoon vanilla extract
- Just a little bit of salt
- 1/4th cup sugar, more if you want it sweeter
- 1 ½ cups whipped cream
- 1 tablespoon cold water
- 3/4th teaspoon unflavoured gelatin, for the cream to set
- In a small saucepan, add heavy cream, milk and sugar.
- On a low flame, stir till the sugar is dissolved and the cream is hot. Don’t let it come to a boil.
- Switch off the heat and add the vanilla essence. Let it cool.
- To make the gelatin bloom, sprinkle three tablespoons of water over one packet and let it sit for 5 minutes before adding it.
- Take the bloomed gelatin and add it to the cooled cream and stir for a minute till it dissolves.
- Pour it into small glasses and refrigerate for 2 hours.
- For the mango sauce, blend the mango pulp, lemon juice and sugar in a food processor. Do so till the texture is smooth.
- Add this mix to a saucepan on low heat.
- Add butter to the mix and stir it in. Afterwards, turn off the heat.
- You can add more lemon juice or sugar as per your taste.
- Let the mango sauce cool down and put in the refrigerator for 30 mins.
- Now, pour the sauce over the set panna cotta.
