Mango Phirni
Mangoes are going out of season, yet there is a desire to hang on to its yummy taste. Also, mangoes have an eternal favourite with us Indians. So, why not make an innovative dish with Kesar or Alphonso mango pulp?
Mango Phirni is a spin on the traditional rice kheer. Adding mangoes gives a zing to the tasty delight. This rich and creamy dessert will woo your brother or sister, hands down.
Here’s how to make it
- Put 1½ litres of milk to boil
- Once it comes to boil, add ½ cup of soaked, dried and ground rice
- Keep on medium flame and stir occasionally
- Add 1teaspoon of green cardamom powder
- Add sugar, once the mixture starts to thicken and keep stirring
- Add 1 cup Kesar mango pulp
- Add a handful of dry fruits- pistachio and almonds can be used
- Keep cooking on low flame and cover for a while
- Don’t forget to keep stirring as this is the time the mixture can stick to the pan and burn
- Cook till the texture is a little thick and creamy
- Add a tablespoon of saffron milk (a few strands of saffron soaked in a tablespoon of warm milk)
- Serve chilled
